Onion-Potato Stew
Today I tried making potato stew again. Huh.. Means I tried and failed before. Some habits never change; today also I got up late. Veeran had to leave at 8. And I was planning to make Idli and stew [ishtoo for Malayalees]. So had to cook potatoes and Onion in the pressure cooker. To use less cooking gas I decided to cook the vegetables for the curry for lunch as well.
And I cut the veggies as fast as I could and kept it in the cooker and lit the flame. I thought that by the time the veggies cook I'll start preparation for idli part. Once I finished pouring the batter in the idli racks I was getting suspicious why I cant see any steam coming out through the nozzle of pressure cooker. Suddenly I realized that something is burning in the kitchen. Huh.. I had forgotten to pour the necessary water in the cooker :-(. Thank God that it dint burn completely :-). I got messed up with the whole thing and ended up in upma as breakfast :-D.
Anyway now Idli and stew will be served for dinner :-D [Sigh.. Paavam Veeran].
Coming to the recipe part.
Required Items:
----------------
Cut Potatoes: 2 cup
Onion cut lengthwise: 1 cup
Green Chilly: 3 [cut it lengthwise] {Can use more if you like it to be a bit more spicy}
Finely chopped Ginger: 1 table spoon
Coconut Milk: 1 cup
Coconut Oil: 2 table spoon
salt to taste
[Huh.. I actually dont know the measurements. I take the amount that I feel that I should]
How To Mess Up :-P

Cook the cut veggies in pressure cooker by adding required amount of water; Dont make it too watery. In my cooker 2 whistles are enough. Once the pressure is down take it out and put it in flames. Once it boils add salt and stir well. Add the coconut milk and let it boil for some time. Take it out of flames and pour coconut oil over it. Garnish it with curry leaves. Stew is ready. Have it with Idlis.
Huh.. It seems to be so simple now. Dont know why it took so much time in the morning :-(.
BTW this is my way of preparing stew. Yours will be different. Anyways you can try this easy one :-).
